Ingredients

  • 24 ounces cremini mushrooms washed and halved or quartered
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt
  • ½ teaspoon onion powder
  • 3 cloves garlic minced
  • 1 sprig fresh rosemary chopped
  • 2 sprigs fresh thyme chopped

Instructions

  • Preheat oven to 425°F.
  • In a large bowl, whisk together the olive oil, red wine vinegar, salt, onion powder, garlic, rosemary, and thyme.

  • Add the mushrooms to the bowl and toss to combine.

  • Spread the mushrooms out on a large baking sheet.
  • Roast for 12-15 minutes until the mushrooms are browned and tender.

  • Sprinkle with additional chopped herbs before serving.

Notes

  • You can use porcini, shiitake, or white button mushrooms instead of cremini.
  • You can use melted butter or avocado oil instead of olive oil.
  • Try apple cider vinegar or balsamic vinegar for a different flavor.
  • Feel free to switch up the herbs!
  • Try adding a sprinkle of Parmesan cheese during the last 5 minutes of the roasting time.
Storage: Store roasted mushrooms in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 10 months.
