In a large skillet set over medium-high heat, melt the butter and sauté the yellow onions until they are just softened.

Add the ground chicken into the skillet and cook until browned. Drain any excess fat.

Season the chicken with the fish sauce, apple cider vinegar, chili sauce, lemon juice, garlic powder, ginger, and cayenne pepper, and stir for 1-2 minutes over medium heat.

Mix in the green onion, water chestnuts, and cashews. Cook for another 3 minutes and then remove from heat.

Prepare the bibb lettuce leaves by washing them and then patting them completely dry.
