- ¼ Cup olive oil
- 2 Cups cherry tomatoes
- 5 oz parmesan cheese
- 2 Cups pasta your favorite kind
- 2 Garlic cloves minced
- Pepper to taste
- Fresh Basil for garnish
Preheat the oven to 400 degrees. Add the olive oil, cherry tomatoes and parmesan cheese and toss to evenly coat. Sprinkle with pepper and take to the oven.
Bake for 35 to 40 minutes or until the top of the parmesan cheese is golden and the tomatoes are roasted.
While the tomatoes and parmesan are baking, prepare the pasta according to package directions. Reserve ⅓ Cup cooking pasta water.
Remove from the oven. Add the garlic and stir everything together. The tomatoes and the cheese will mix together creating a creamy sauce.
Add the pasta and the reserved cooking water and toss until everything is well coated.
Sprinkle with pepper and serve with basil.
This pasta is super easy to make! The flavor is really similar to the oven you get at restaurants that’s cooked in a giant parmesan wheel.
If you prefer the garlic flavor to be milder, add it to the baking dish in the last 5 minutes of baking.
- Cook the pasta al-dente as it will continue to cook once you've drained it and when it is stirred into the sauce.
- Make it a fully meal by stirring in cooked shredded chicken.
