Air Fryer Twice Baked Potatoes Recipe

- 4 large russet potatoes scrubbed and dried
- Olive oil
- Kosher salt to taste
- Cracked black pepper to taste
- ½ cup heavy cream or milk
- ¼ cup unsalted butter softened
- 1 cup shredded cheese divided
- Chopped bacon for garnish
- Sour cream for garnish
- Green onions for garnish (optional)
Preheat air fryer to 400F.
Wash and scrub the potatoes, then pat dry. Use a fork to poke holes in the potato
Rub all sides with olive oil, salt, and pepper. Place potatoes into the air fryer basket and fry at 400 degrees F for 70 minutes, until the outside is crisp and the inside should be fork tender.
When potatoes are cool enough to handle, carefully cut them in half and scoop out the insides into a bowl.
Add butter, heavy cream, salt and pepper to taste. Use a hand mixer or potato masher to whip the potatoes until light and fluffy, adding more butter and heavy cream if desired.
Divide the mashed potato between the potato skins. Return to the air fryer for 4 minutes at 400 degrees F, until the tops begin to brown. Sprinkle with cheese and fry for an additional 1-2 minutes until melted.
Carefully transfer the baked potatoes from the air fryer to a serving plate. Top with bacon, sour cream, and green onions and serve hot.
- Use starchy potatoes for the best texture.
- Fully pre heat the air fryer before adding the potatoes so that they cook evenly through.
- Best served straight away, but they will keep well in the fridge for up to 4 days and can be reheated in the air fryer at 400F for 3 to 4 minutes to warm through and crisp back up.
