How to Make Instant Pot Black Eyed Peas

What are Black Eyed Peas?

Black eyed peas are not actually peas; they are a type of bean (close enough though, right?). They get their name from the dark, black spot in the middle of the otherwise light-colored bean.

They’re known as “peas” because they come from a cowpea plant. There you have it!

Why do people eat Black Eyed Peas on New Years Day?

Its a tradition in the South to eat Hoppin’ John (or black eyed pea soup) on New Years Day to bring prosperity for the year to come. I think its a fun tradition, and we’re lucky that Black Eyed Pea Soup just happens to be delicious!

I keep it easy by making Black Eyed Pea Soup in the Instant Pot. 20 minutes and I can capture the tradition!

Ingredients 

  • 1-2 tablespoons cooking oil
  • 1 onion chopped
  • 1 rib celery chopped
  • 1 carrot chopped
  • ½ cup cabbage shredded
  • 1 12 ounce link smoked sausage, sliced
  • 2 cloves garlic minced
  • 5 cups low sodium chicken stock
  • 2 cups canned or frozen black-eyed peas rinsed (if using canned beans)
  • 2 14.5 ounces cans diced tomatoes, undrained
  • 2 cups kale center stems removed, chopped
  • 1 teaspoon dried parsley
  • 1-2 teaspoons hot sauce depending on spice preference
  • 1 bay leaf – remove afterward
  • 1 teaspoon red wine vinegar
  • ½ teaspoon cumin
  • Salt and pepper to taste optional
  • Chopped parsley optional garnish

Instructions 

  • Set a 6-quart Instant Pot to sauté. When hot, add the olive oil and heat.
  • Add the onion, celery, carrot, and cabbage. Sauté, stirring occasionally, until the onions start getting soft.
  • Add the sliced sausage and garlic. Sauté for 1-2 minutes.
  • Add the chicken stock, black-eyed peas, diced tomatoes, kale, parsley, hot sauce, bay leaf, red wine vinegar and cumin.
  • Press “cancel” to turn off the sauté function. Press “manual” and use the “+” and “_” buttons to set the Instant Pot to cook for 5 minutes. Set the valve to seal.
  • When the instant pot beeps and the “L000” screen comes up, do a quick release by carefully turning the valve to let the steam out.
  • Remove the bay leaf and add salt and pepper to taste, optional.
  • Serve warm and sprinkle on optional chopped parsley.

This was a really delicious soup! The store I went to didn’t have canned or frozen black eyed peas so I bought a bag of dry and made them in the instant pot with ham and onions. Other than that I made the soup as instructed and wow it was so easy and comforting. We had leftover beans and soup so the next day I reheated both together and liked the extra heartiness of the added beans. This is the only change I would make in the future. Thank you!
