How to make Shrimp Fajitas on the Stovetop

  1. Prepare shrimp and pat dry.
  2. Combine shrimp, olive oil, onion, garlic, and fajita seasoning in a bowl.
  3. Heat a large pan/skillet on the stove, then add in the shrimp mixture.
  4. Cook briefly, until the shrimp turns pink.
  5. To assemble the fajitas, start by warming the tortillas. Then fill with shrimp and toppings.
  6. Serve while warm and enjoy!

Shrimp cooks fast and only needs a few minutes in the skillet. It’s done when it starts to turn pink. It will only need about 3 minutes, so stay nearby while cooking.

What should I serve with shrimp fajitas?

These fajitas make a great little meal served along with a salad or simple side dish. Try this cilantro lime rice, confetti corn salad, or this Mexican grilled corn.

Can I make these ahead of time?

The great thing about a quick recipe like this, is that you don’t need to make it ahead of time. However, you CAN do some prep (cut veggies, grill up the sweet corn, etc.) or store cooked shrimp in the fridge (up to 3 days).

There really isn’t much cooking with these shrimp fajitas though, so you won’t need to do much to get these ready in a rush.

  • Be sure to defrost and drain the shrimp before cooking (if using frozen shrimp).
  • Make your own fajita seasoning, or pick up a packet at the store.
  • Smaller handheld-size tortillas work great for these shrimp fajitas!

Ingredients 

  • 1.10 lbs. shrimp defrost and drained (500 g)
  • 2 tablespoons olive oil
  • 1 small onion sliced
  • 3 garlic cloves minced
  • 2 oz Fajita seasoning
  • 1 tablespoon fresh cilantro chopped
  • 8 small size corn Tortillas
  • Lettuce cut in ribbons
  • Red onion sliced
  • Cherry tomato halves
  • Sweet corn grilled
  • Guacamole
  • Limes quartered

Instructions 

  • Pat dry shrimp with a kitchen towel.
  • In a large bowl, mix shrimp, oil, onion, garlic with fajita seasoning mix.
  • Heat a large pan over medium-high heat until it smokes hot. Add shrimp mix in the pan and sear. Let shrimps cook until nicely pink on both sides. It will take about 3 minutes. Remove from heat.
  • Prepare fajitas. Warm each tortilla in a non-stick skillet for about 10-15 seconds on each side. Start the filling by adding lettuce and red onion then shrimps. Top with cherry tomato, sweet corn, guacamole and lime.
  • Serve immediately.
