The best part is that you can cook this in less than 30 minutes. Beautiful and simple is quite a winning combo. How to Make Honey Mustard Salmon and Potatoes

This baked salmon sheet pan dinner is just too easy! The honey mustard salmon is made similar to our Herb Crusted Salmon recipe, where we add a layer of mustard and our own breadcrumb mixture to create the perfect crust. I just love the crispy texture the honey mustard crust adds to the salmon as it bakes in.

How to Make this Salmon & Veggies Sheet Pan Dinner:

  1. Toss the quartered potatoes and green beans in a bowl with olive oil, garlic powder, and salt & pepper.
  2. Spread the veggies out on a baking sheet in a single layer, and bake for 10 minutes at 375°F.
  3. Combine the honey mustard with the dry mustard. In another bowl, combine the panko breadcrumbs with parsley and parmesan.
  4. Spread a thick layer of the mustard mix on each of the salmon fillets, and then pat on the breadcrumb mixture.
  5. Once the veggies have cooked for 10 minutes, add the salmon and tomatoes to the baking sheet. Then bake everything for 15-18 minutes.

This meal is easy to serve, because all you have to do is place a piece of salmon on each plate and add some of the veggie mix. Such a tasty meal!

Ingredients 

  • 1 lb. red potatoes quartered
  • 2 cups green beans snipped
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 teaspoons garlic powder
  • 1/2 cup fresh parsley chopped
  • 1/2 cup honey mustard
  • 2 tablespoons dry mustard
  • 4 6 ounce salmon filets, skin removed
  • 1 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 2 cups cherry tomatoes kept whole

Instructions 

  • Preheat oven to 375F
  • In a large bowl, toss the potatoes, green beans, olive oil, salt and pepper, and garlic powder. Toss to make sure all the veggies are coated in the oil and spices.
  • Spread the veggies out on a large baking sheet in a single layer.
  • Bake for 10 minutes.
  • Meanwhile, combine the mustards in a small bowl. Combine the panko, parsley and parmesan in another small bowl. Spread the mustard in a thick layer on one side of each salmon filet.
  • Coat the mustard layer with panko mixture and pat to make sure it adheres.
  • After the veggies have cooked for 10 minutes, remove from the oven and add the salmon. You can add them right on top of the veggies, or move the veggies around a bit to make room for the salmon. Also add the tomatoes to the pan.
  • Return to the oven and bake for another 15-18 minutes, or until the salmon is completely cooked through (opaque).
  • Serve the salmon alongside the vegetables. Enjoy!

oo doesn’t traveling just take it outta you. I love to travel but I’m with you, when I’m traveling all the time, it’s like i’m trapped in a tornado. It’s awesome but hectic. Love this sheet pan meal! I’ve been making a lot more of them lately and they’re just great for dinner after work!
