How to Make Healthy Peanut Butter Balls

How to make Banana Peanut Butter Energy Balls:

  1. Combine all ingredients in a mixing bowl
  2. Use a fork to mash everything together until it becomes the desired consistency
  3. Place the mixture in the refrigerator for 30 minutes
  4. When ready to make the bites, roll the mixture into 1-inch balls

Equipment

Ingredients 

  • ½ cup peanut butter 135 grams
  • 1 banana chopped
  • cups old-fashioned oats 150 grams, plus more if needed
  • cup small flake coconut 75 grams
  • ¼ cup ground flaxseed 35 grams
  • ½ cup mini chocolate chips 89 grams
  • 1 tablespoon granulated sugar 13 grams (or sweetener of your choice)

Instructions 

  • Combine all ingredients in a bowl. Using a fork, mask and stir until all ingredients are well combined. If you feel the consistency is a bit too sticky, add more oats as needed.
    ½ cup peanut butter, 1 banana, 1½ cups old-fashioned oats, ⅔ cup small flake coconut, ¼ cup ground flaxseed, ½ cup mini chocolate chips, 1 tablespoon granulated sugar

  • Place the bowl in the refrigerator for about 30 minutes. This will help in creating the bites later.
  • Remove the bowl from the refrigerator and roll "dough" into 1-inch sized balls.

Do you have a suggestion of an alternative to the sweetener? Sugar water? Just sugar?

I know you asked this a while ago but in case anyone is wondering, I’d imagine any syrup would work. I use Agave or honey and it’s perfect, I’d be willing to bet maple syrup would work (though it would alter the taste), corn syrup, rice syrup, molasses (again , it would alter the flavor), etc. even very reduced sugar water would probably work.

I also used agave for sweetener.

I am DELIGHTED to have come across your site! I have bookmarked it in my folder titled “Fun Blogs”. *smile* And I am particularly grateful that you have included this recipe on your site. I have reactive hypoglycaemia and simply never know when my blood sugar is going to hit the floor seemingly out of the blue. I am always looking for recipes for something healthy to be able to grab really quickly. Low blood sugar too often triggers seizures so I will eat anything I need to, and too often it’s just an unhealthy sugar snack. These banana oatmeal bites are going to be FABULOUS for me to have on hand!

But could you suggest a different sweetener? I am also allergic to Stevia. However, since the bites are small I am sure using plain sugar will still keep this snack healthy enough. Thank you SO MUCH!

Hello,
I came across these because I needed to use up some bananas. I substituted powdered Stevia for the monk fruit. I added flax and chia seeds then one extra banana and more oats for it bundled up nice and held together. My biggest problem was NOT eating any before they were finished. It tasted really good.: -)

The next batch I’ll do a peanut buttet /nutrla blend.
