Ingredients

  • Bread: Use thick slices of French bread for the best texture.
  • Egg Whites: Form the base of the custard. You can use a container of egg whites, or separate the whites yourself from 8 large eggs.

  • Peaches: I recommend using sliced jarred peaches, with no added sugar. Fresh and frozen peaches won’t work quite as well.

How long do you bake overnight french toast?

This casserole takes about 50 minutes to bake in the oven at 350°F. The main thing you want to check is that it has cooked and warmed all the way through. You don’t want any runny eggs left behind.

Why is my baked French toast soggy?

We use thick slices of a hearty French bread here for a reason: it does a better job of soaking up the egg mixture than other types of bread. If the bread is too soft or light, it could end up soggy.

Can I use another fruit instead of peaches?

Other types of stone fruit (like plums and apricots) could be easily substituted here.

Can I freeze it?

Yes! This make-ahead french toast bake is also freezer-friendly. It’s a great dish for holidays and if you are going to be elbow-deep in other tasks, you can make it days in advance.

Prepare the entire casserole as instructed, bake it, and then freeze it. Make sure it’s tightly wrapped in aluminum foil (two layers).

Ingredients 

  • 18 ounces French bread 510 grams, thickly sliced (1 loaf)
  • cups egg whites 280 grams, All Whites Brand recommended (or 8 separated large eggs)
  • 2 cups skim or almond milk 454 grams
  • ¼ cup granulated sugar 50 grams
  • 1 teaspoon pure vanilla extract 4 grams
  • 38 ounces no sugar added sliced peaches 1,077 grams, drained (2 19-ounce jars)
  • ½ cup dark brown sugar 107 grams
  • ½ teaspoon ground cinnamon
  • 1 cup heavy cream 227 grams
  • 1 cup whipped topping 60 grams, thawed, such as Cool Whip

Instructions 

  • Spray a 9×13-inch baking pan with nonstick spray.
  • Arrange the bread in a tight, flat layer in the prepared baking pan. The bread should be as close together as possible.

  • In a small bowl, mix the brown sugar and cinnamon together. Set aside.
    ½ cup dark brown sugar, ½ teaspoon ground cinnamon

  • In a large bowl, whisk the egg whites with milk, sugar, and vanilla until blended; pour over the bread.

  • Arrange the peaches on top of the bread and sprinkle with the brown sugar and cinnamon.

  • Cover tightly and refrigerate for at least 8 hours.
  • Remove baking dish from refrigerator 30 minutes before baking. Preheat the oven to 350°F.
  • Pour the cream into a small pan set over high heat and bring to a boil. Reduce to low heat and simmer until reduced by half, about 10-12 minutes.

  • Drizzle sauce over peaches, place the pan in the oven, and bake, uncovered, until casserole is lightly browned on top and just cooked through, 50-55 minutes.

Can whole eggs be used? How many? Whole milk? Why reduce the heavy cream? thanks, Need something different for ladies Christmas brunch. REAL maple syrup? REAL whipped cream?

Hi Jane! This recipe is designed to be a bit lighter in calories than your standard french toast, hence the changes. You can use whole eggs. I would reduce to about 5-6 eggs if using whole. You can also use whole milk!

We reduce the heavy cream so that there isn’t too much liquid, but you still get that delicious flavor! If you don’t reduce it, you may end up with soggy french toast!

We like to use whipped topping because it’s more stable and looks nicer, but you can absolutely use real whipped cream. If you use real whipped cream, just be aware that it will start to melt pretty quickly.

You can always use real maple syrup in our breakfast recipes unless the recipe specifies otherwise. We just know that lots of people don’t have access to the real thing, so you can also use pancake syrup.

I didn’t read all of the directions partly because of all of the advertisements. I added the cup of heavy cream to the rest of the liquids. I also didn’t add any sugar, which was intentional because peaches and maple syrup are sweet enough, but I did add a large container of fresh blueberries hoping it makes up for the no sugar. I’m looking forward to finding out if it turns out okay tomorrow morning.
