Valentine’s Day has always been one of my favorite holidays. While most people go out for a nice dinner and dessert, I think VDay should be celebrated all day long. The best way to do that is breakfast in bed with this delicious Chocolate Covered Strawberry Baked Oatmeal recipe!

Valentine’s Day Breakfast

I think VDay deserves more than just a night out for dinner. I want to wake up to a delicious Valentine’s Day breakfast and keep it going all day. Chocolates, flowers, desserts, everything, coming at me the whole day. Maybe that’s asking for a lot, but why shouldn’t we pamper ourselves and our loved ones to the max?

This Chocolate Covered Strawberry Baked Oatmeal is EXACTLY what I want to be eating in the morning, and I love that it is still a healthy option too. Because I definitely need to leave room for desserts later on! There’s nothing not to love about this chocolate strawberry oatmeal.

This makes a special breakfast for Mother’s Day too, so keep this recipe on hand all year-round!

How to Make Strawberry Chocolate Baked Oatmeal

This baked oatmeal recipe is everyyyything I could want in a delicious breakfast. Strawberry and chocolate oatmeal, baked to perfection, topped with fruit, whipped cream, more chocolate…AND it’s not totally awful for you? Sign me up!

How to make baked oatmeal:

  1. In a large mixing bowl, stir together oats, brown sugar, baking powder, cinnamon, salt, strawberries, and chocolate chips.
  2. Pour the oatmeal mixture into the prepared baking dish, and sprinkle chocolate chips on top.
  3. Now whisk together milk, egg, butter, and vanilla. Pour this mixture evenly over the entire dish of oatmeal.
  4. Bake the oatmeal for 40 minutes at 375°F.
  5. When it’s done baking, sprinkle on 2 tablespoons of brown sugar, then place it back in the oven and broil for about 2-3 minutes.

This baked strawberry chocolate oatmeal comes out the perfect texture, and it’s just so tasty. Top with whipped cream, sliced strawberries, chocolate chips, or even some chocolate sauce. SO yum!

Equipment

Ingredients 

  • 2 cups old-fashioned rolled oats 200 grams
  • 7⅓ tablespoons brown sugar 98 grams, divided (⅓ cup + 2 tablespoons)
  • 1 teaspoon baking powder 4 grams
  • 1 teaspoon ground cinnamon 3 grams
  • ½ teaspoon kosher salt
  • cups sliced strawberries 251 grams, fresh or frozen
  • ½ cup milk chocolate chips 85 grams, divided
  • 2 cups whole milk 454 grams
  • 1 large egg 50 grams
  • 3 tablespoons unsalted butter 42 grams, melted
  • 2 teaspoons pure vanilla extract 8 grams

Optional Toppings

Instructions 

  • Preheat oven to 375°F. Spray an 8x8 square baking pan with nonstick spray. Set aside.
  • In a large bowl, stir the oats, ⅓ cup brown sugar, baking powder, cinnamon, salt, strawberries, and almost all of the chocolate chips together. Pour the mixture into the baking dish and smooth out completely. Sprinkle with the remaining chocolate chips.
    2 cups old-fashioned rolled oats, 7⅓ tablespoons brown sugar, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, ½ teaspoon kosher salt, 1½ cups sliced strawberries, ½ cup milk chocolate chips
  • Using the same bowl, whisk together the milk, egg, butter, and vanilla. Pour the milk mixture over the oat mixture, making sure to cover the entire mixture. Tap the dish on the counter lightly to make sure its evenly distributed.
    2 cups whole milk, 1 large egg, 3 tablespoons unsalted butter, 2 teaspoons pure vanilla extract
  • Bake for 40 minutes, or until the edges are bubbly and the top is golden. The center should not jiggle.
  • Remove from the oven and sprinkle with the remaining 2 tablespoons brown sugar. Switch the oven to high broil and allow the oatmeal to toast for approximately 2-3 minutes. Watch it closely to make sure it doesn't burn.
  • Remove from the oven and serve topped with fresh whipped cream, sliced strawberries, extra chocolate chips, or chocolate syrup. Toasted walnuts would also be tasty!

  • You can use milk, semisweet, dark, or white chocolate chips!
  • Try raspberries instead of strawberries!
  • To freeze, spoon oatmeal into the wells of a muffin tin and freeze until solid, about 1-2 hours. Transfer to an airtight container or Ziplock bag for storage.

We are not much for Valentine’s Day around here. Never were when we were dating or early married years, and now with a kid even less. But I love this oatmeal. And Valentine’s Day is only different around here because of the food – this is perfect :)
