Ingredients 

For the Mint Simple Syrup

  • 1 cup superfine sugar or granulated sugar
  • 1 cup water
  • cup fresh mint leaves (1 ounce)

For the Mojitos

  • 2 cups white rum (16 ounces)
  • 1 cup fresh lime juice (from 6-8 limes)
  • 2 cups club soda

For Garnish

  • Fresh lime slices
  • Mint sprigs

Instructions 

For the Mint Simple Syrup

  • In a small saucepan set over medium-high heat, bring the sugar, water, and mint leaves to a simmer. Stir until the sugar dissolves, then simmer for 3 more minutes without stirring.
    1 cup superfine sugar, 1 cup water, ⅔ cup fresh mint leaves
  • Pour the simple syrup over a mesh strainer set over a larger bowl.
  • Set the simple syrup in the refrigerator to cool for about 30 minutes.

For the Mojitos

  • Once the simple syrup has cooled, pour it into a large pitcher and add the rum and lime juice and stir to combine.
    2 cups white rum, 1 cup fresh lime juice
  • Chill in the refrigerator for at least 1 hour or up to 3 days.

For Serving

  • When ready to serve, add the club soda and gently stir.
    2 cups club soda
  • Pour into ice-filled glasses and garnish with lime slices and mint leaves (if desired).

I really enjoyed making and drinking this recipe! I needed to make it ahead of time and needed it virgin. I read some of the comments and just replaced the rum for the same amount of mineral water. We recommend either swapping some of the lime juice for pineapple juice or muddling some pineapple in the bottom of the glasses!

We made 100 of these for a party and followed the adjusted recipe exactly. We premade and mixed everything 3 days before except the club soda, which we added right before serving. I have been “researching” (tough job, I know) for about 10 years and this one is perfect. I especially love that you can get this prepped several days ahead of your gathering and pull it out a few minutes ahead of guests arriving.
