Ingredients 

For the Mint Simple Syrup

  • 1 cup superfine sugar or granulated sugar
  • 1 cup water
  • cup fresh mint leaves (1 ounce)

For the Mojitos

  • 2 cups white rum (16 ounces)
  • 1 cup fresh lime juice (from 6-8 limes)
  • 2 cups club soda

For Garnish

  • Fresh lime slices
  • Mint sprigs

Instructions 

For the Mint Simple Syrup

  • In a small saucepan set over medium-high heat, bring the sugar, water, and mint leaves to a simmer. Stir until the sugar dissolves, then simmer for 3 more minutes without stirring.
    1 cup superfine sugar, 1 cup water, ⅔ cup fresh mint leaves
  • Pour the simple syrup over a mesh strainer set over a larger bowl.
  • Set the simple syrup in the refrigerator to cool for about 30 minutes.

For the Mojitos

  • Once the simple syrup has cooled, pour it into a large pitcher and add the rum and lime juice and stir to combine.
    2 cups white rum, 1 cup fresh lime juice
  • Chill in the refrigerator for at least 1 hour or up to 3 days.

For Serving

  • When ready to serve, add the club soda and gently stir.
    2 cups club soda
  • Pour into ice-filled glasses and garnish with lime slices and mint leaves (if desired).

I would like to use this recipe for a large party including kids. Would this work without the rum, letting the adults add their own rum and kids getting in on the fun, “rum” free?

Love the recipe! I have the same question! My party is on Sunday and I wanted to make this ahead of time for about 30 people including kids. If I take the rum out, should I just replace it with lemon lime sprite in the same quantity as the rum? I was planning on using the sprite instead of the club soda though so was just thinking to eliminate the rum all together? Would it make a difference in the sweetness? Thank you!!5 stars

Didn’t have quite enough limes for a double batch, so used one big Meyer Lemon and was still short a few. But my limes were juicy and my mint grows luxuriously and the pitcher of Mojitos was a big hit at our party. I have an old seltzer bottle so it makes it even more fun to add the fizzy water at a party. You can buy vintage seltzer bottles cheaply on ebay and the CO2 cartridges on Amazon.5 stars
