Hot Chicken Salad Pie Recipe

I love everything my mom cooks, but I have a couple of favorites. Her Creamy Chicken Soup, classic Spaghetti and Meatballs, and Sherry Chicken never disappoint. I truly crave them all the time.

And then there is her Hot Chicken Salad Pie. It’s a fun take on a classic recipe– the ultimate comfort food. Hot chicken salad is baked into a pie crust and topped with lots of cheese for something absolutely amazing. It’s an easy chicken casserole. Yum!

This is my absolute favorite meal to eat on a chilly day, curled up under a blanket, watching reality TV! Pat isn’t a fan of my TV habit, but he indulges me if it means he can eat this Hot Chicken Salad Pie. Sounds like a good deal for everyone!

Chicken Salad Pie Ingredients:

  • Chicken
  • Almonds
  • Yellow onion
  • Celery
  • Lemon juice
  • Mayonnaise
  • Sour cream
  • Cream of chicken soup
  • Water chestnuts

  • Black pepper
  • Smoked paprika
  • Cheese (I recommend Cheddar and Gruyere)

How to Make Chicken Salad Pie – Step by Step

  1. Preheat oven. Place the pie dough in a 10″ pie plate.
  2. Combine all ingredients. Pour into the pie crust. Bake for 30 minutes.
  3. Sprinkle more cheese over the pie and continue baking.
  4. Take out of the oven and let the pie rest/cool for 10-15 minutes before cutting.

What Pie Crust Should I Use?

We love to use Trader Joe’s pie crust for Hot Chicken Salad Pie. It’s super flaky and it tastes just like homemade.

How Do I Make a Dip With This Recipe?

Oh yeah! The hot chicken salad filling also makes a killer dip all on its own. Just skip the crust, bake according to the recipe card, and serve with fresh veggies, pita chips, or bread. YUM! It’s a real hit at parties.

I like to double the recipe and make both–one pie and one dip. You won’t regret it!

How to Make Baked Chicken Salad Dip:

  1. Mix all ingredients together, pour into a casserole dish, and bake for 30-40 minutes.
  2. Serve hot with chips or crackers!

You can also make the dip in a slow cooker. Simple heat on low until all the ingredients are melty and able to be stirred together. Serve with your favorite crackers.

Can I Freeze Leftovers?

Leftovers? I’ve never had any leftovers from this recipe, but if by some chance you do, I would not recommend freezing. There is a lot of dairy and mayo in Hot Chicken Salad Pie, and they will separate and get runny.

Instead, refrigerate any leftovers and reheat in the microwave at 50% power.

Ingredients 

  • 1 10-inch unbaked pie crust
  • 1/2-1 cups sautéed sweet yellow onion (Sauteed in 1 T olive oil & 1 T butter until translucent.) See Note
  • 1/2 cup sautéed celery (Sauteed in 1 T olive oil & 1 T butter until translucent.) See Note
  • 1/2 cup toasted slivered almonds (Toasted in the oven for 5-7 minutes. Watch closely.)
  • 3 cups cooked chicken Diced. See Note
  • 2 tablespoons lemon juice
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 12 ounce can cream of chicken soup
  • 6 ounce can water chestnuts diced and sliced
  • 1/2 teaspoon Parisien or Bonnes Herbs
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika
  • 1 1/2 cups shredded cheese Divided. See Note

Instructions 

  • Preheat oven to 375 degrees. Place the pie dough in a 10" pie plate.

  • Saute the onion and celery and set aside. Toast the almonds (optional).
    1/2-1 cups sautéed sweet yellow onion, 1/2 cup sautéed celery, 1/2 cup toasted slivered almonds
  • In a large bowl, combine all ingredients with 3/4 cup of the cheese. Mix well.
    1/2-1 cups sautéed sweet yellow onion, 1/2 cup sautéed celery, 1/2 cup toasted slivered almonds, 3 cups cooked chicken, 2 tablespoons lemon juice, 1/2 cup mayonnaise, 1/2 cup sour cream, 12 ounce can cream of chicken soup, 6 ounce can water chestnuts, 1/2 teaspoon Parisien or Bonnes Herbs, 1/2 teaspoon ground black pepper, 1/4 teaspoon smoked paprika, 1 1/2 cups shredded cheese
  • Pour into the pie crust.
    1 10-inch unbaked pie crust
  • Bake uncovered for 30 minutes.
  • After 30 minutes, sprinkle the last 3/4 cup of cheese over the pie.
    1 1/2 cups shredded cheese
  • Bake 10-15 minutes more. The pie should be set in the middle and crust golden brown.
  • Take out of the oven and let the pie rest/cool for 10-15 minutes before cutting.

Becky’s Tips

  • To save time, use a pre-made, unbaked pie crust, and buy rotisserie chicken that has already been pulled from the bones.
  • Instead of chopping onion and celery for this recipe, pick up some pre-chopped packaged veggies in your grocery store’s produce section. 
  • You can saute the onion and celery together to save time. Saute in 1 tablespoon oil and 1 tablespoon butter until translucent. 
  • For the shredded cheese, we used half cheddar and half gruyere. You can use whatever shredded cheese your family loves best. 
  •  If you need a delicious dip, just mix all ingredients (except the pie crust, of course) together. Bake in a sprayed casserole dish for 30-40 minutes.  Serve with crackers and/or vegetables.

Chicken salad is one of my favorite dishes, but my hubby doesn’t care for it (at all). I think I will slip this in on him, call it cream of chicken pie, and see if he buys it.

I make something very similar but without the cheese and I add a can of drained vegetables for my chicken pie. And I add a top pie crust. I use the two-pack of rolled dough. I use a quiche dish. Cut holes in top crust for steam while cooking. Very good!

Hi – Got here from a link at recipelion.com. Your dish looks delicous – I’ll make it as soon as we buy more chicken! I plan to use my homemade “cream of soup mix”, but pretty well follow the rest of your recipe. I always try to follow recipes the first time, then tweak if we want to add different items and herbs. Looking forward to making it this weekend.

The baked chicken salad went over very well last night at my house! For my small family, this recipe was enough to make an 8″ pie AND a small dip. I substituted organic cream of mushroom soup, then added 1 c of sliced mushrooms, Bragg’s Organic Herb Blend, sea salt & cayenne pepper, then garnished it with dried parsley. We LOVE it!
