How to make Cheesy Potato Foil Packets

  1. Mix together the ranch and oil in a ziplock bag.
  2. Add in the potatoes and shake to coat.
  3. Place the potatoes onto foil and top with cheese.
  4. Fold over the foil.
  5. Place n a grill and cook on both sides.
  6. Serve with your favorite toppings.

What toppings can you add?

These grilled ranch potatoes are great as they are, or you can load them up with toppings like chives, sour cream, bacon, ham, salsa, or broccoli. You can set out the toppings so everyone can dress them just as the like.

What are the best potatoes to use?

I like to use baby red potatoes for these foil packets. They are waxy, so don’t fall apart when they are grilled, unlike Russets or Yukon Gold.

There’s no need to peel them, just give them a wash, cut them in half and you are good to go.

Ingredients 

  • 2 pounds baby red potatoes halved
  • 1 Hidden Valley Ranch dressing packet
  • 3 Tablespoons olive oil
  • 1 ½ cups cheddar cheese shredded
  • 1 teaspoon chives optional

Instructions 

  • In a large ziplock bag, combine the ranch dressing packet and olive oil. Shake to combine.
  • Add the potatoes to the mixture and close securely before shaking.
  • Cut 4 large pieces of tinfoil and divide the potatoes evenly between the four.
  • Top each potato packet with a fourth of the cheese.
  • Pull up the long ends and meet in the middle, then fold down. Fold the ends closed tightly.
  • Preheat the grill to 350° on medium heat.
  • Place the foil packets, seam side down. Grill for 10 minutes, then flip over.
  • Grill an additional 7 to 10 minutes.
  • Remove and carefully open and enjoy.
  • Top with chives, sour cream, bacon, ham, salsa, or broccoli.
