How to make Raspberry Lemonade from Scratch

  1. Heat together the sugar and water and allow to cool.
  2. Blend the raspberries with some water.
  3. Strain the raspberries through a sieve.
  4. Add the lemon juice, water, sugar and raspberries to a pitcher and stir to combine.

How long does it keep?

Once you have made up your pitcher, keep it covered in the fridge and it will keep well for around 7 days. If making ahead of time, it’s best not to add any garnish until you are ready to serve.

Can you use frozen raspberries?

Yes, you can use fresh or frozen raspberries in this drink. I prefer to use fresh, but frozen works great if that’s what you have.

Can you turn it into a cocktail?

You can easily make this raspberry lemonade a little more adult by adding in a spirit. Vodka, gin and white rum all work well. Just stir it into the pitcher or add a shot to a glass before pouring.

Tips!

  • Don’t add ice to the pitcher, add it to the glasses instead. If you add ice too early it will melt and dilute the flavor.
  • Don’t be tempted to use bottled lemon juice, it won’t be nearly as delicious and it’s definitely worth the effort.

Ingredients 

  • 1 cup (220 g) granulated sugar
  • 7 cups (1.6 L) water, divided
  • 2 cups (500 mL) freshly squeezed lemon juice (about 10-12 lemons)
  • 1 ½ cups (245 g) fresh raspberries
  • Lemon slices and extra raspberries for garnish optional

Instructions 

  • In a small saucepan stir together the granulated sugar and 1 cup (250 mL) water. Heat over medium-low and continue to stir until the sugar has dissolved, about 3-4 minutes. Set aside to cool.
  • Add the raspberries and ½ cup (125 mL) water to the bowl of a blender or food processor. Blend until smooth. Strain through a fine-mesh sieve, using a spoon to push the mixture through, and add to a large pitcher or jar.
  • Add the lemon juice, remaining 5 ½ cups (1.3 L) water, and cooled sugar mixture to the pitcher. Stir to combine.
  • Serve over ice with extra lemon slices and raspberries for garnish if preferred.
