How long do frozen cocktails keep?

I love frozen cocktails because they can be made way ahead of time! Once you have blended the drink, pour it into a freezer container and it will keep well for up to a month!

Remove the drink form the freezer 10 minutes before serving and give it a stir before pouring into glasses.

Can you use frozen pineapple?

I prefer to use canned pineapple as I also add in the juices that it is packed in. If you use frozen, pour in a little pineapple juice when you blend it so that it’s not too thick.

Can you make this alcoholic

This cocktail is made with white rum. If you are not a drinker or want a mocktail version, it’s easy! Simply swap the rum for extra pineapple juice and you are good to go!

Ingredients 

  • 7.5 ounces Real Cream of Coconut Coco Lopez
  • 1 8-ounce can crushed pineapple (undrained)
  • 7.5 ounces white rum
  • 6 ounces pineapple Juice
  • ¼ cup vanilla ice cream
  • 4-5 cups ice

Instructions 

  • Pour Cream of Coconut and crushed pineapple in a blender and purée until smooth.
  • Add rum and pineapple juice and blend until incorporated.
  • Add ice cream and top with 4 cups ice. Purée until desired consistency.
  • Pour into ice-cold glasses and serve immediately, or if making ahead, see *Note below.

  • If making ahead: prepare the Pina Colada mixture and pour into an airtight freezer container. Keep frozen until ready to use (up to 1 month). Remove from freezer 10 minutes before serving, stir (or give a quick mix in the blender), pour into ice-cold glasses and serve.

This sounds delicious! Could rum extract be added for a non-alcoholic version? Maybe a teaspoon and then a little extra pinapple juice to make up for the 7.5 ounces of white rum?

Is the 6 ounces pineapple Juice in addition to the juice from crushed pineapple can?
