- 1 tablespoon minced garlic
- 1 cup chopped carrots

- 28 ounces diced fire roasted tomatoes (1 can)

- 6-8 cups low-sodium beef broth
- ¾ cup dry long-grain rice
- 1 tablespoon Worcestershire sauce
- 1½ teaspoons smoked paprika
- ¾ teaspoon dried thyme
- ½ teaspoon dried marjoram
- 2 bay leaves
- Kosher salt and freshly ground black pepper to taste
- Freshly grated Parmesan cheese optional, for serving
